Rajasthani roast rump of lamb with corn sauce
Acclaimed Indian chef Vivek Singh, who has appeared in numerous TV shows, offers his Rajasthani roast rump of lamb with corn sauce recipe as one option this Valentine’s Day.
He told The Mirror: “Though this dish is full of Indian flavours the technique of searing the meat and then reducing the sauce is distinctly French in style.”
Singh added the mixture and whole corn kernels add an “interesting texture” to the dish, comprising lamb steaks and corn sauce made with ghee, cloves, cardamon, bay leaves, onion, green chillies, turmeric, garlic, sweetcorn, yoghurt, lamb stock, ginger, coriander, lemon and diced lamb.
Shrimp ghee roast
Alternatively, you could serve shrimp ghee roast rich in Indian flavours over a bed of rice. The recipe consists of shrimp, finely chopped onions, ginger, garlic, tomato paste, chills, vinegar, turmeric, red chili powder, cilantro powder, garam masala, and either sugar or honey.
Chicken makhani
Fans of Indian food will be familiar with chicken makhani, a deliciously creamy curry originating from northern India.
The finished dish looks very authentic, but it is easy to recreate at home. Simply marinade chicken, sear it in a pan, and make the curry sauce. This is a great meal to prepare ahead, so you don’t have to fuss about with lots of ingredients on Valentine’s night.
