Sweet Potato Fries

Ingredients:

2 Tbsp melted Happy Butter ghee

500g scrubbed sweet potatoes

2 Tbsp polenta (optional)

salt and pepper

Method:

Pre-heat oven to 200ºC

Cut sweet potatoes into even shaped sticks and place in a bowl.

Gently melt ghee and add to the bowl with a couple of pinches of salt and pepper and polenta if using (the polenta gives the fries an added crunch)

Stir and mix well to ensure an even covering.

Place on a baking sheet and bake in the oven.

After 15 mins check and turn the fries. Return to the oven for another 10-15 mins.

Serve with a dip of your choice.

We like creamy avocado (place 1 avocado, 2 Tbsp yoghurt, ½ clove garlic, salt and pepper and a squeeze of lemon or lime into a processor and pulse for a couple of minutes)
